How can I make home made Hot Pockets?

I loove Hot Pockets but I think they would be a bit healthier, tastier, and cheaper if I can make them myelf. I tried using a basic pizza crust recipe but it's barely like the crust they use for Hot Pokets and taste more like a calzone. It wasn't as flakey. Feel free to post some recipes as well as your thoughts and tips.


Make a pastry crust using one of the following recipes, depending on whether you want to use butter or vegetable shortening. Then, instead of following the instructions for fitting the crust over a bowl or pan, leave it laying out flat on the counter top, spread a little egg wash around the edges, put in your fillings, and put the top crust on. You'll deed to dock the crust (make tiny holes) to let the steam escape. Bake until the crust is puffy and lightly browned.

No Butter:
1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/3 cup shortening (lard or solid shortening)
3 tablespoons ice water

Combine flour, baking powder, and salt in a mixing bowl. Cut in shortening with a pastry blender until mixture resembles coarse meal. Sprinkle ice water evenly over surface. Stir with a fork until all dry ingredients are moistened. Divide dough into 4 pieces. On a lightly floured surface, roll dough out to fit over bowl tops.

Easy Crust:
1 1/4 cups all-purpose flour
1/2 cup (1 stick) butter, softened
2 tablespoons sour cream

Preheat the oven the 375ºF.
To make the crust, place the flour, butter, and sour cream in food processor and pulse to combine. When the dough has formed a ball, pat with lightly floured hands into the bottom and sides of an ungreased 10-inch tart pan with a removable bottom and 1/2-inch sides, or a round au gratin dish. Bake for about 15 minutes, until the crust is set but not browned. Let cool while preparing the filling.

Calzone Pizza Recipe

okay, at my highschool, on days that it was pizza day, it wasn't regular slices of pizza. and from what i've looked up, it kinda looked like a pizza calzone, it usually had sausage, cheese, and pizza sauce in it. only it looked different from a regular calzone. this one folded over so that it had pizza crust on bottom with sauce sausage and cheese over it, then it folded over and had crust, sauce, sausage cheese, then it folded over again, and the top was just crust. has anyone seen this before? do you know where to find this recipe? and if i were to make it homemade, would the middle crust cook?

i just dont want to waste all those ingredients if i do it wrong.


Those calzones that you are describing, which have another layer of crust in the middle are a bit tricky to make. If not cooked long enough, the middle crust comes out improperly done. And sometimes if you cook it long enough for the center crust to get cooked, the outer crusts are overdone or burned!

This means in order to get it just right, one either needs to use a slow oven (lowish cooking temps), or pre-cook the center crust in advance and then stick that pre-cooked crust in the middle of the calzone.

I recommend going with a regular calzone recipe instead, the kind that just has crust on the top & bottom and not in the middle. Especially if this is going to be the first time you're cooking a calzone!

Here's an easy recipe I like:

* Preheat oven to 450°.
* Place dough on a floured surface. Roll out to form a 12 inch circle. Spread pesto evenly on dough.
* Layer sausage, sweet red peppers, basil and mozzarella cheese over pesto.
* Sprinkle on parmesan cheese.
* Fold the dough over in half, into a half moon shape, and pinch the edges together to seal the calzone.
* Make 3 cuts across the top of the calzone approximately 1 inch long.
* Brush with an egg wash (optional) and bake for 20-25 minutes or until golden brown.
* Spoon marinara sauce in the center of the plate.
* Slice calzone in half or in strips and place over sauce.
* Garnish with grated parmesan cheese and more chopped red pepper if desired.

Container: baking sheet or pizza stone
Servings: 6
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients
- 1 canister of refrigerated pizza dough or 1 ball of homemade basic pizza dough
- 3 tablespoons flour - for rolling out dough
- 1/2 cup pesto - purchased or homemade
- 1 cup Italian sausage - cooked and crumbled
- 1/2 cup sweet red peppers - drained and chopped
- 2 tablespoons basil - chopped chiffonade
- 4 (1/2 inch slices) fresh mozzarella cheese
- 1/4 cup fresh parmesan cheese - grated plus 2 tablespoons for garnish
- 1 egg - beaten with two teaspoons of water for egg wash
- 1 cup marinara sauce
chopped red pepper for garnish

To make a 3- layer calzone, you'd need to roll out your dough into an 18" long rectangle instead of a circle. Then, top one far end- 6"- of the long, rectangular dough with pesto and ingredients. Then, fold the next 6" of the dough over that, and top it too with the pesto and ingredients. Then, fold the remaining 6" of the long rectangle over that.

If you don't pinch the edges of this calzone, it is more likely to cook evenly... but some fillings may leak out. If you pinch the edges, your fillings don't leak but your calzone might not cook evenly.

* Brush with an egg wash (optional) and bake at a LOWER temp like 350F for 20-35 minutes, or until golden brown and the dough in the middle is done.

Coming up with the exact time this thing needs to cook is a real pain...one basically needs some trial and error. Also, one can watch it cook in an open brick oven such as is used in Italy, or leave the oven light on and check it periodically to make sure the outer crust doesn't overcook.

What is a good Chicken Calzone Recipe?

Does anyone have a good recipe for chicken calzone. No pizza sauce maybe Alfredo sauce or something else? Any ideas would be great (:


I make pepperoni, sausage, and green chili calzones, but have never made or had them with a chicken filling. Here are a couple recipes that look quite yummy, and I am going to have to give chicken filling a try ;)


CHICKEN, CHEESE, AND BROCCOLI CALZONE

1 (10 ounce) package frozen broccoli, thawed and chopped coarse

2 cups shredded part-skim mozzarella cheese
2 cups shredded cooked chicken
1/4 cup pesto sauce
salt
black pepper
flour, for counter
1 lb pizza dough
2 tablespoons olive oil
kosher salt

1. Position oven rack in middle position; preheat to 450°.

2. Pat broccoli dry and toss with mozzarella, chicken, and pesto; season to taste with salt and pepper.

3. On a floured counter, roll out dough to 12-inch round, about ¼ inch thick.

4. Mound filling over half of dough, leaving a 1-inch border around edge.

5. Brush edges of dough with water.

6. Fold other half of dough over filling and press edges to seal.

7. Grease baking sheet with 1 tablespoon oil; slide wide spatula under calzone and tranfer to baking sheet.

8. Use sharp knife or kitchen shears to cut 5 slits diagonally across top.

9. Brush remaining oil over top and sprinkle with coarse salt.

10. Bake 15-20 minutes, until golden.

11. Cool briefly, cut into slices and serve.

BONELESS BUFFALO CHICKEN CALZONE

2 boneless chicken breasts, cut into large chunks
1/2 cup breadcrumbs
1/2 cup milk or egg wash, your preference
18 ounces pizza dough
1 cup shredded cheese, I use a blend of mozzarella and cheddar
1/4 cup hot sauce
oil (for frying)

1. Heat oil to med heat in frying pan.

2. Dip chicken pieces into milk or egg wash, then coat in bread crumbs.

3. Fry them in pan, turning occasionally for approximately 5 minutes or until done (when juices are clear).

4. Drain on paper towels.

5. Roll out pizza dough to size of a pizza pan.

6. Place chicken on one side of dough.

7. Sprinkle hot sauce over chicken.

8. Cover with cheese and add more hot sauce if desired.

9. Fold other half of pizza dough over chicken.

10. Press down at edges to seal.

11. If desired, top pizza dough with some extra cheese.

12. Bake at 350°F for approximately 25-30 minutes or until pizza dough is browned.

13. Cut into pizza shaped wedges, serve with ranch or blue cheese dressing.

Strong Bones Through Food

We all need to have calcium in our diets in order to maintain strong and healthy bones. Many of us are not drinking a glass of milk with dinner, or eating the yogurt we should at snack-time. Sometimes it doesn't matter that we know we should, we just eat the foods that taste good to us instead. It is possible to eat calcium-rich foods in ways that taste great.




According to the National Institute of Health, 8 ounces of 2% milk contains 30 percent of the recommended daily calcium intake. Although it may not be easy for you to find a time to drink a glass of milk, you can use those 8 ounces of milk to create a more palatable treat. Pudding is incredibly simple to make from scratch: all you need is milk, sugar, cornstarch, and flavoring. Instant pudding would have an equal amount of calcium, but not the same flavor. Everyone knows that chocolate milk goes down easier, so why not add a packet of Carnation Instant breakfast to make that one glass contain 55 percent of that day's calcium requirements? Homemade recipes for macaroni and cheese (not the instant box type) can have substantial amounts of cheese.




Some of the less popular sources of calcium have been judged unfairly. One-half cup cooked spinach can taste great while providing you with not only 12 percent of your daily calcium requirement, but also iron and fiber. An ounce and a half of mozzarella will give you another 28 percent. Put them together in some pizza dough (adding another couple percent of your required intake) with some tomato sauce and you have a delicious calzone providing nearly half of your daily required amount of calcium.




One cup of black beans will also provide approximately 12 percent of your daily requirement. Eating them plain might not sound so appetizing, but you can easily make a marvelous chili by adding just a few ingredients and cooking in a slow cooker. Or make a soup with black beans and spinach along with some other vegetable. You'd be surprised how much you like these foods once you try them.




Eight ounces of yogurt contains approximately 25 percent of your daily calcium requirements, making it a great snack or breakfast. There are many different flavors to choose from, so no matter your taste preferences yogurt has something to offer you. Unfortunately, frozen yogurt only provides 10 percent of your calcium needs, so it won't take center stage in this endeavor. Frozen yogurt does remain a great treat. Perhaps you could make it a way to reward yourself for the steps you are taking towards your bone health.




Although you can make excuses like that texture of yogurt makes you hesitant, you can always consider eating a handful of almonds alongside it. You could make a smoothie in the blender with yogurt and frozen or fresh fruit. If you continue to try new ways to incorporate calcium-rich foods into your diet you are bound to find methods that work for you. Eating well can taste good, too.

Scone Based Pizza Recipe

How much baking powder to add to scone recipe?

I am making a scone based pizza base that calls for 8oz of self-raising flour but I only have plain, how much baking powder should I add?


Make this and it will be instant self rising flour:

INGREDIENTS
all-purpose flour (amount of self rising flour you need in the recipe)
salt (1/2 teaspoon)
baking powder (1 1/2 teaspoons of baking powder if it's 1 cup of flour and 3 teaspoons of baking powder if it's 2 cups and 4 1/2 teaspoons if it's 3 cups and so on)

DIRECTIONS
Mix up all of the ingredients.
