Finding Healthy Breads

The low-carb diet craze has led many people to believe that carbohydrates are bad for your health.  However, this is not the case.  Carbohydrates, like breads, can be a healthy part of your diet if you know which ones to choose. 




First, look for whole grain breads, which hare rich in essential vitamins and minerals.  Many breads are made from refined grains with added fiber.  Always choose whole wheat bread over white bread.  Grain should be listed as one of the first ingredients on the list.  Other key ingredients to look for include oat, rye, barley, brown rice, buckwheat, bulgar, millet, and quinoa. 




Next, pick breads that have no added sugar.  If these are not available, then choose the bread with the lowest sugar content.  Many processed foods, especially breads, contain many added sugars.  You will know that a bread has added sugar if the ingredient list contains high fructose corn syrup, corn sweetener, malt sugar, molasses, dextrose, fructose, glucose, lactose, maltose, or sucrose. 




Finally, make sure that the bread does not contain any trans fat.  To identify trans fat, look for partially hydrogenated oils or other products on the ingredient list.  Soybean oil, corn oil, cottonseed oil, safflower oil, and sunflower oil are also forms of trans fat.  Avoiding these types of fats in bread and other foods can help you to maintain a healthier lifestyle. 




If you are having difficulty finding a packaged bread that is good for you, try turning to the bakery section of your local grocery store.  Many supermarkets now bake fresh breads that do not have added preservatives, oils, or trans fats.  Of course, you can also try baking your own fresh bread at home, which allows you to control all of the ingredients. 




Following these simple guidelines can help you to pick good-for-you breads that can be a part of your healthy diet.

Crunchy Carrot Salad
Low in sodium, this salad will more than meet your daily vitamin A requirement.




1 1/2 cups fresh, grated carrots
1 unpeeled red apple, chopped
1/4 cup raisins
1/8 cup toasted slivered almonds (optional)
1/2 cup low-fat plain yogurt
1 1/2 tablespoons low-fat mayonnaise
2 teaspoons lemon juice
Salad greens

Combine carrots, apple, raisins, and almonds in a salad bowl. Blend together remaining ingredients in a separate bowl and add to carrot mixture. Serve on salad greens. Serves 3.




Squash Apple Casserole
This dish is high in vitamin A, a good source of vitamin C, cholesterol free, and almost sodium-free.




2 1/2 cups fresh winter squash, cut into 1/2 inch slices
1 1/2 cups cooking apples, pared and cut into 1/2 inch slices
2 teaspoons cinnamon
1 teaspoon nutmeg




Alternate layers of squash and apples in an 8"x 8" pan, ending with apples on top layer. Sprinkle spices over top layer. Cover pan with aluminum foil and bake in 350 degree F oven for approximately 45-60 minutes until squash is tender. Remove foil and bake another 10-15 minutes to remove any excess liquid that might have accumulated. Cool slightly before serving. Serves 4.




Baked Winter Squash




1 large acorn or butternut squash
2 tablespoons maple syrup
1 teaspoon cinnamon
Margarine or Non-stick cooking spray




Preheat oven to 400 degrees F. Lightly grease a baking sheet with the margarine or cooking spray.




Slice the squash into rounds 1/4 inch thick. Remove seeds on each slice and arrange squash in a single layer on the baking sheet. Bake the slices for 8 minutes, turn, and drizzle lightly with maple syrup and cinnamon. Bake for 8 minutes longer; remove from the oven and let cool. Serves 4.




Pizza Potatoes




1/2 cup broccoli, chopped
1/4 onion, chopped
1/4 cup carrots, chopped fine
1 small tomato, sliced
2 baked potatoes
1/2 tablespoon margarine
1/2 tablespoon flour
1/2 cup skim milk
1/4 cup cheese, shredded




Cook broccoli, onions, and carrots in a small amount of water until tender and set aside. In a saucepan, melt margarine and stir in flour. Add milk slowly while stirring. Cook until sauce thickens, stirring occasionally. Add cheese and stir until melted. Add vegetables to cheese sauce and stir. Split open potatoes. Pour equal amounts of vegetable cheese mixture over each potato. Top with sliced tomatoes.




Serves 2.




CHOCOLATE CHIP MUFFINS




2 cups floor




½ cup white sugar




3 ½ teaspoons baking power




½ teaspoon salt




1 egg, beaten




1 cup milk




¼ cup oil




1 cup chocolate chips




Bake at   Bake @400 F   18-20 minutes




GRANDMA'S WHIPPED SHORT BREAD COOKIES




1 POUND………(500 G)……………..BUTTER OR MARSRINE




3 CUPS………..(750 ML)……………FLOUR




1 CUP ……………(250 ML)…………..ICING SUGAR




Beat with mixer until creamy.  Drop on cookie sheet and bake at 350 F, (175 C) until slightly brown.




YIELD: approximately 5 dozen cookies




TIME:  1 hour (includes cooking and cleaning time)

Dinner Blessings




The housewife invited 2 couple and their children for dinner one night. As they get ready to eat, the housewife asks her son, "Would you like to say blessings"?




"I don't know what to say", the boy replies. "Just say what you hear what your mother says", replied the mother.

CARPET CLEANER




If you have a cat, get rid of fleas in your carpet and keep carpet, rugs, fresh smelling.




½ cup baking soda




½ cup of cornstarch




½ teaspoon of Rosemary or Penny Royal citronella oil.




Before going to bed mix baking soda, cornstarch, and oil together. Spread evenly across carpet and scrub it into fibers with a stiff brush or broom.  Leave over night; vacuum it up in the morning.




NO CATS; Just want to clean carpet substitute any fragrant oil.

Harmful Chemistry That Are Used In The Home.
* Ammonia is poisonous, extremely irritating to respiratory passages, and can burn the skin on contact.
* Alkyl phenol ethoxylates (Apes) - common in detergents and disinfectants, are suspected hormone disruptor's.
* Triclosan, often found in antibacterial soaps, lotions, and gels, may be contributing to the rise of antibiotic-    resistant germs.
* Butyl cellosolve (aka butyl glycol, ethylene glycol monobutyl) is poisonous if swallowed.
* Chlorine bleach irritates the lungs, eyes, and is extremely damaging to aquatic life.
* Phthalates, frequently found in fragrances, contains chemicals linked to asthma in children, and also may cause reproductive abnormalities.
* Phosphates are often found in detergents and are used to soften the water, thus making the detergent more effective.
* Sodium hydroxide is found in drain, metal and oven cleaners. Extremely irritating to eyes and lungs, this chemical can burn those tissues on contact.
* Sodium lauryl sulphate creates the suds we love to see when cleaning, but can cause dermatitis with prolonged contact with the skin.




Window Washer




For crystal clear window washer, Mix a tablespoon of cornstarch in a bucket of water, and wipe the solution onto the glass with paper towels.  Rinse with clean water. Great for car or house windows.




BABY WIPES




Since heading the market in the 80's, these moistened disposable baby wipes proved to be great in and outside the home.  From cleaning your hands after changing oil or a tire, clean tools, rub marks off your walls, many, many uses including shining your shoes, wipe with baby wipe and buff with a soft, dry cloth.




To freshen up a smelly drain, just pour a cup of Baking Soda into it, and flush with hot water.




Blocked Drains?




Instead of using caustic products (be green and save money) for clearing blocked drains, throw a cup of baking soda down the drain followed by a few jugs of water.

Don't rely on looks alone. Bacteria can spread during ground meat.  Always use a food thermometer and cook at 160 degrees Fahrenheit when cooking your hamburgers.

If you're having a party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks.

2 drinks taken within an hour by a person 100 pounds produces a 075 reading. One drink is equal to about 1.5 oz. of whisky or 2 bottles of beer. The rate of elimination for each hour after drinking has stopped is 015. A 200-pound person, after 1 drink produces a reading of .019, so you can see there is a big
difference due to weight.




SHANGHAI COCKTAIL




¼ juice of lemon




1-teaspoon anisette




1 ½ ounce Jamaica rum




½ teaspoon grenadine




Shake with ice cubes. Strain into cocktail glass.




MARTINI (sweet)




1-ounce gin




½ ounce Italian vermouth




1dash orange bitters




Stir with ice cubes. Strain into chilled cocktail glass




NON- ALCOHOLIC DRINKS
ORGEAT FIZZ
1 ½ ounces orgeat syrup
½ ounce limejuice
Club Soda
Shake orgeat and lime juice with ice cubes. Strain into fizz
Glass.  Add ice cubes. Add soda to glass. Serve with straws.




ICED COFFEE




There are just as many ways of making coffee, as there are different brands. Here are some general rules.




For good results measure water and coffee.




2 tablespoons coffee to each 1 cup




Make coffee just before serving




Make coffee double strength and pour the hot coffee over ice in a tall glass.  As the ice melts, it will dilute the coffee. Top the glass with whipped cream or vanilla ice cream.

Baked Potato Bread

Looking for something other than baked or twice baked potatoes?

We are having New York Strip steaks for dinner tonight.We are just having steak,salad,potato and bread.I need a suggestion for a potato dish other than the regular baked or twice baked potato.


Ranch Roasted Potatoes

Ingredients
2 pounds potatoes, washed, and cut into bit size pieces,
1/4 cup vegetable oil
1 packet dry Hidden Valley ranch dressing mix (seasoning and salad mix)

Directions

Preheat oven to 425°F.

Place potatoes in a resealable plastic bag and add oil, seal bag.
Toss to coat, add salad dressing mix and toss again until coated.

Bake in an ungreased baking pan for 20 minutes, turn and bake another 15 mins or until potatoes are brown and crisp.

Rosemary& Garlic Potatoes

Ingredients

2 lbs red potatoes, left whole if small,halved or quartered if large
8 cloves garlic, peeled
2 tablespoons extra-virgin olive oil
1 tablespoon dried rosemary
salt,
fresh ground pepper

Directions

Preheat oven to 400.
Place the potatoes and garlic in a shallow baking dish large enough to hold them in a single layer.

Drizzle with the oil and toss well to evenly coat.
Sprinkle with the rosemary, salt and freshly ground pepper.
Toss again.

Roast, uncovered, for 40-50 minutes, depending on size, turning halfway through cooking time, or until the potatoes are nicely browned and tender through the center.

Onion Parmesan Potato Slices

Ingredients

2 lbs red potatoes, sliced 1/2 inch thick
1/3 cup vegetable oil
1 envelope dry onion soup mix
grated parmesan cheese
pepper

Directions

Combine all ingredients in a large plastic bag, seal and shake until well coated. Empty bag into a 13x9 dish, cover and bake at 425 degrees for 35 minutes, stirring occasionally.

Uncover and bake 15 minutes longer or until potatoes are tenderand crisp

Herbed Potato Wedges

Ingredients

12 small new potatoes, cut into wedges (about 2 lb.)
1/4 cup olive oil
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon dried oregano
1/8 teaspoon cayenne pepper

Directions

Toss together all ingredients in a large bowl; spread mixture evenly into a lightly greased, aluminum foil-lined 13x9 inch baking dish.

Bake at 425 degrees for 35 minutes or until tender. Turn and bake another 15 minutes.
