Family Dinner - Baked Chicken Mozzarella Recipe

As a busy mom and wife, I am always looking for easy and time saving chicken recipes, and this one fits all of those 'mom' requirements.

What I like about this recipe is the fact that it is made with every day ingredients that you most likely have on hand. To save time, I will make step 1 the day before and then refrigerate it in a container. The next day, I will reheat the step 1 ingredients in the microwave for 1-2 minutes and then proceed with step 2. I do this so that I am not spending an hour in my kitchen on a busy work or school night.

Chicken Mozzarella Recipe

Step 1 Ingredients:

2 1/2 lbs. of boneless, skinless, chicken breasts
2 eggs, well beaten
1/2 cup seasoned dry bread crumbs
1/4 cup butter or margarine
1 can (8 ounces) tomato sauce or spaghetti sauce
3/4 teaspoon dried basil leaves

Cut chicken breasts in half and remove skin. In a small bowl, beat eggs. Dip meat into eggs and then dip into dried bread crumbs. Heat butter in a large 12" round frying pan until melted. Place breasts in the frying pan over medium heat and simmer until it has browned on all sides. Stir in the tomato sauce and basil; reduce heat. Cover and cook over low heat until done, about 30-40 minutes.

Step 2 Ingredients:

1/2 cup Mozzarella cheese, shredded
1/4 teaspoon paprika

In a small bowl, combine the Mozzarella cheese with the paprika until blended.

Arrange chicken pieces in an un-greased 9" square baking dish along with the rest of the ingredients from step 1. Sprinkle the cheese mixture on top. Preheat oven to 375 degrees and bake in your oven for 15 to 20 minutes or until cheese has melted and is bubbly around the edges.

Chicken Fajita Pizza Recipe

chicken fajita pizza recipe
Recipe idea for chicken fajita pizza, but can I use the tortilla? Creative mood, but hungry . .?

I just love ideas like that! Of course you can use the tortilla, just like it is, or warmed. Make seasoning mixture:

1 envelope Fajita Seas. Mix
1/2 cup water
1/2 tsp. garlic powder
1/2 tsp. BBQ spice
1/2 tsp. hot chili powder

Cut into thin strips:

1 lb. skinless boneless chicken breast
1 EACH red and green bells
1 onion

Mix seasoning together and set aside. Saute' above 3 ingredients until crisp-tender, about 8-10". Add seas. mix and bring to a boil. Reduce heat and simmer 5 minutes. Top tortilla with this mixture. Make dressing:

3/4 cup salsa, 1/3 cup 1000 Island, 2 Tbl. sour cream. Top fajita with dressing. Add some jalapenos if you got 'em, and if you can take it! Yummy!

This can also be served as a Fajita Salad, using lettuce instead of tortilla. Beef can used instead of chicken.

Chicken Pizza Recipe

Quick and Easy Chicken Salad Recipes

As a kid, I loved tuna salad. Because I was so picky, it was one of few foods that I ate. My mom used to go so far as to pack me a tuna sandwich when she and my brother went out for pizza (as that was not one of my accepted foods at the time).  As I got older, I started to experiment with different foods, and one day while at a friend’s house, I tried chicken salad for the first time. Up until that point, I had never thought of creating a mayo-based sandwich filling with cut up chicken, one of my favorite foods.

My friend cooked a few chicken breasts (which I marveled at since I was young and had no experience cooking my own meat) and then the two of us mixed in some mayo, chopped celery, raisins, salt and pepper. I was blown away by how delicious it was. Every time I hung out with that friend after school, I would request that we make chicken salad, and I even asked my mom to show me how to cook my own chicken so I could make it at home and pack chicken salad sandwiches for lunch.

To this day, I enjoy creating chicken salad variations with nuts, dried fruit and fresh herbs. My favorite is still the classic mayo, celery, salt, pepper and raisins combination, but I’m always looking for new variations. I found a great selection of recipes on RecipeLion.com; they have everything from classic chicken salad and fruit-filled chicken salad to baked chicken salad recipes and even a low-fat version. I loved the unique idea of adding artichokes and sundried tomatoes, two items that I love but never would have thought to include in my chicken salad.

One thing I’ve found is that many people are turned off of chicken salad because of an often overwhelming amount of mayonnaise. Believe it or not, there are many ways to make a delicious chicken salad sandwich without mayo. You can replace mayo with your favorite salad dressing – vinaigrettes work well – and add the rest of the ingredients in the same way. This is a great variation of classic chicken salad and it will save you quite a few calories.  If you’re not completely opposed to mayo, use a dollop to add moisture and then add your favorite veggies, nuts or mix-ins.

No matter what type of chicken salad you prefer, you can mix up a batch in no time. If you don’t want to cook chicken on the spot, use leftovers from a previous meal. Just remove the skin and dice up the meat. You can also snag a rotisserie chicken from the grocery store (almost all grocery stores have them in the hot foods section), cut it up and have meals for days. Use the white meat to make chicken salad and use the rest of the bird for other quick and easy meals like tacos, chicken pizza or sandwiches. It’s a fast and simple way to get a meal on the table in no time, and the juicy chicken will create a fabulous chicken salad that everyone will enjoy.

Try out a new chicken salad recipe this weekend. Play around with different ways to dress the salad, add crunch and flavor. You might be surprised with what you come up with.

Baked Chicken With Bread Crumbs

baked chicken with bread crumbs

Easy Chicken Recipe - Baked Chicken Breast on a Bed of Asparagus, Peppers and Onions

This tasty and healthy chicken and veggie recipe could be made with all olive oil in place of the butter when cooking the chicken tenders. In doing so you would sacrifice some of the flavor added by the butter, but if you're worried about the fat & cholesterol, then by all means do so.

You get a great variety of flavors with the asparagus, green pepper and the cheese. To vary it even further and make a recipe of your own you could substitute other vegetables. Some you might think of are: broccoli or Brussels sprouts. They would add a different flavor mix if substituted for the asparagus..

For the green pepper you might substitute another variety of pepper. Jalapeno comes to mind, but I would use a much smaller quantity. .

You could change this recipe to an Alfredo sauce dish by adding the Parmesan cheeses, some cream or milk with stirring and heat after step 7. Then add the veggies and chicken, omit the breadcrumbs, and finish the dish on the stovetop.

Ingredients.

6 large asparagus spears

2 chicken breast tenders, seasoned with salt and pepper (about 3 oz)

1/2 green pepper cut in thin strips

1/2 onion slice thin

2 tablespoon grated Parmesan cheese

1/3 cup bread crumbs

2 tablespoon olive oil

2 tablespoon butter.

Instructions.

1 - Snap bottom fibrous sections of asparagus spears.

2 - Cover with salted water and cook until crispy tender (about 5 minutes).

3 - Remove, drain, and set aside.

4 - Heat oven proof skillet and add olive oil

5 - Saute' pepper strips and onion slices until onions are translucent.

6 - Remove and set aside then in the same skillet add the butter and saute' the seasoned
chicken tenders for 1 - 1 1/2 minutes per side.

7 - Remove the chicken pieces and set aside.

8 - Layer the asparagus spears on the skillet bottom, then add onions and peppers and
chicken tenders, and top with bread crumbs and Parmesan cheese.
9 - Bake for about 10 minutes in a preheated 400 degree oven.

Chicken Pizza Recipes

How to Make Healthier Chicken Wings

I was born and raised in Buffalo, N.Y., so I have had my fair share of chicken wings.  I think this recipe is great for everyone, because they are baked and not deep fried.  Which I like because deep frying can be a little dangerous in the kitchen.

Naturally the #1 food at most parties is chicken wings, followed closely by pizza. I know their are 100's of ways to make chicken wings and I'm sure most are very good. The recipe I want to share with everyone is great tasting, but almost as important as the great taste of these wings is the simplicity of making them. Also they maybe a little bit healthier, because they are baked in the oven.

The first thing to do is go to your local dollar store and buy a couple disposable baking pans, get any size you want. I would suggest the large ones that you can make lasagna in, I find they work the best.

This is the basic recipe for 2 1/2 lbs. chicken wings medium heat.

Preheat oven 425 f
2 1/2 lbs. chicken wings cut in 2 so you have a wing part and a little drumstick looking part, just spread the wing apart and cut into 2 pieces.

Spread the wings out in your disposable pan and bake for 1 hr.

For the sauce:

1/3 cup margarine try a healthy one like smart balance
1/2 cup hot sauce in Buffalo we use Frank's Red Hot Sauce, which has this recipe on the bottle.

Melt your margarine then add your hot sauce, when the wings are done cooking, remove them from the oven. Then add your hot sauce into the pan with the wings and stir or shake gently the wings in the sauce.

A great way to serve them is in a crockpot on low or warm setting this way they will stay nice and warm for your party.

Just a regular blue cheese dressing is fine, a good one is use bottle ranch dressing and add your own fresh blue cheese. Celery and carrot sticks and your ready to party. The best part is no pans to clean. Trust me I tried this way with my own pans lined with foil and it still was a mess.

I hope you enjoy these wings at your next get together.

I am a hockey fan from Buffalo, N.Y. and over the years have tried many chicken wing recipes and this one is my favorite. You can make them ahead of time and then put them in a crockpot for the party, and they also travel easily.

Baked Chicken Bread Crumbs

Extra Juicy Oven Baked Chicken Nuggets

Ever since the fast food restaurants and take-out places started serving finger foods like chicken nuggets, many home cooks have probably wondered how you can make a healthier version at home. Deep fried foods such as chicken nuggets, French Fries and other foods usually contain saturated fats, even after draining off the grease. If you bake them, you can do a better job of controlling the fat content. You also have the opportunity to use herb mixtures of your choosing to give them more flavor than you get with just salt and pepper seasoning. This recipe uses thyme and basil, and also Parmesan cheese to give a nice herb crusted nugget. To make these extra juicy they are dipped in a mixture of olive oil and lemon juice, then coated with fine bread crumbs. Another way they are made extra juicy is by using a high temperature and a short bake. Another benefit of using lemon juice is that acids are often used to tenderize, so these should get a little tenderizing effect from the lemon juice. A good experiment to try would be to coat the nuggets with lemon juice in a bowl and refrigerate for a few minutes. However you do it these chicken nuggets are sure to please even your finicky grand kids!

2 chicken breast halves, skinless and boneless
1/2 cup fine brown bread crumbs
1/4 cup grated Parmesan cheese
1 teaspoon thyme
1 teaspoon basil
2 tablespoons lemon juice
1/3 cup olive oil

Instructions:
1 - Preheat oven to 500 degrees
2 - Cut chicken breasts into 1 1/2" cubes.
3 - Combine bread crumbs, thyme, and basil and spread on a plate.
4 - Mix the lemon juice with olive oil and stir until uniform.
5 - Dip cubes in liquid mixture, then coat with crumbs mixture.
6 - Bake for 8-9 minutes on greased baking sheet.

Does Nutrisystem Sell Frozen Meals And Food Entrees?

The other day, I received an email from someone who said that she'd just spent a large amount of time trying to locate Nutrisystem products in the frozen food aisle of the grocery store. She'd seen the lean cuisine section, the weight watchers section, and the "smart ones" selections, but, no matter how hard she looked, she couldn't find what she was looking for.  She asked: "am I wrong in thinking that Nutrisystem sells frozen meals?  If they do offer these, where can I buy them?"  I'll answer this question in the following article.

The Company Does Offer A Frozen Food Line, It's Called Nutrisystem Select:  Many of this diet's foods are prepackaged but not frozen.  However, the company does have a new line of frozen meals out.  These meals are touted as being "restaurant quality" and they are decent tasting and pretty convenient.  However, these meals are not sold in grocery stores.  Like all of the diet plan's products, you have to order this option online also.  But, this isn't as bad as it sounds.  They usually have the food to you in only a few days and sometimes they do offer free shipping if you can find the correct coupon.

Cost Of And Choices On Nutrisystem Select:  This plan is just slightly more expensive than the company's regular plan which does not include the frozen foods.  For example, the monthly cost of the basic regular program is $299.  For the Select program, you'll pay about $369 instead.  However, both of these plans usually offer coupons that will bring this price down.  And many people feel that the extra cost is worth it because many find that the foods taste a bit better.

They also give you a lot of choices with this plan. A few of the examples of the offerings for breakfast are french toast, egg sandwich, vegetable frittata strata, and pancakes. (You are also allowed to have some of the regular choices too, like the oatmeal, muffins, scones, cereal, etc.)

For lunch and dinner, just a few examples are chicken and shrimp Alfredo, ravioli, margarita pizza, chicken fajitas, steak and cheese melt, ham and cheese panini, Asian beef, and beef with portabella mushrooms.

The desserts include apple and peach crisp, a fudge sundae, an ice cream sandwich, a chocolate bar, and blueberry parfait, to name a few.  Whether you feel that these frozen entrees are worth the extra money is going to be an individual choice.  They are quite convenient requiring only rewarming, or in the case of the ice creams, just taking off the wrapper.

I'm sometimes asked what is the difference between going with the Nutrisystem frozen foods or just buying some of the frozen foods in the grocery aisle like lean cuisine.  There's actually a noticeable difference in the nutrition and carb / protein content.  Your Nutrisystem results and success is based on your body getting into a metabolic state called ketosis.  In order to get there, you have to consume higher amounts of protein and lower amounts of carbs.  If you look at the carb content in frozen foods like lean cuisine, you'll see that the protein content often is not high enough to get you into ketosis.  Also, they tend to have a much higher salt and carbohydrate content.

So, sure, you may be eating a low amount of calories, but that's not all you need to do (at least for most people) to get the results that you want. The protein, carbohydrate, and fiber content must be satisfactory to get into ketosis and most of the grocery store offerings just don't fit the bill.

Add the chicken to the bowl and ensure that it is evenly coated. Allow this to sit for half an hour at room temperature, then cover and move to the refrigerator for about 3 hours. To cook, heat the oil at a high heat in a skillet. Put the chicken strips into the pan and sauté them for 5 minutes. Add in the green pepper and onion and continue to sauté for an additional 5 minutes. Remove from heat and sprinkle with lemon juice before serving.

2 tbsp lemon juice
1/4 tsp pepper
1/2 tsp salt

Directions:
You will need two shallow dishes. In one dish, combine the lemon juice, butter, garlic, pepper, and salt. Mix well. Place the bread crumbs in the other dish. Roll the chicken in the lemon and butter mixture, then roll it in the bread crumbs for an even coating. Place the chicken in a greased 9 x 13-in baking dish. Arrange the chicken thighs in a greased 9 x 13-inch baking dish and brush each piece with the sauce. Turn them over and brush the other side. Bake at 425 degrees F for about half an hour. Flip the thighs over and bake for an additional half an hour, or until done. Try to baste the chicken with sauce about every 10 - 15 minutes as it bakes.

1/4 tsp celery seed
1/2 tsp salt
1/4 tsp black pepper

Directions:
In a medium-sized sauce pan, add the chicken, peas, celery, and carrots and fill with water until all ingredients are submerged. Cover and boil for about 15 minutes. Remove from heat and drain, and transfer to a bowl. Set aside. In the sauce pan, cook the onions in butter until they appear translucent. Add the flour, celery seed, pepper, and salt. Stir in the chicken broth and milk very slowly. Simmer the mixture over a medium-low heat until the sauce thickens. Remove from heat and set it aside. Place the chicken and vegetables into the bottom pie crust. Pour the liquid flour and chicken broth mixture over the chicken and cover with the other pie crust. Pinch the edges of the pie crusts together to seal them. Cut away any excess dough as necessary. Make a few small slits in the top and bake for about half an hour at 425 degrees F (or until the crust turns a nice golden brown. Cool for a few minutes before serving.

but ijust wanna get in better shape for the summer :-D
so this is my diet pLan from March 5th - ApriL 30th
iwanna lose 15-20 pounds in 8 weeks :)

Let me know if this is a good start & if i shouLd keep it going :

Lunch : iate Steamed vegetables with baked chicken breast & tartar dressing
Dinner : Chinese Chicken & beans w. WhoLe Grain bread
Snacks :WeLchers 100% fruit snacks (the small 80 calorie pack)
**iaLso drank 6 cups of water :-D

Exercise :
30-45 minutes of Fast-waLking//jogging
5 minutes of jumprope
20 push-ups
20 lunges
20 squats
2 minute PLank HoLds
50 crunches
20 leg lifts

Is my goal of losing 20 pounds in 8 weeks possibLe w. this Diet pLan ?

Number 1: 15-20 lbs in 8 weeks is not healthy or realistic. A healthy weight loss rate would be 1-2 lbs a week.
Number 2: You are not eating enough fruits and vegetables, you need at least 4 servings a day and here you are only getting 3 total! Fruits and vegetable are a healthy, vitamin packed way to lower calories. You are missing out on a ton of important vitamins! Get rid of the fruit snacks, just have a REAL piece of fruit! And make sure that peanut butter has no added sugar, that's just extra calories.
Number 3: The only way to lose weight is to consume less calories than you burn in a day. So find an online calculator such as www.bmi-calculator.net/bmr-calculator/, that will tell you how many calories you naturally burn in a day and may calculate in exercise. Keep a food journal and calculate how many calories you consume in a day. To loose a pound a week there has to be a 3500 calorie deficit at the end of the week to lose a pound, 7000 for two pounds and so on.

Good luck!

Garlic Chicken Pizza Recipe

garlic chicken pizza recipe
Does this sound like a good recipe or a disaster?

I cut up some chicken breast and browned it in a non-stick pan with some garlic, salt, and pepper. I'm going to slice an avocado in half, scoop out the pulp, mash it up with some chopped tomatoes and a little cilantro (dried, because I don't have fresh on hand).
I want to mix that with the chicken and spoon it into the avocado shells. Put a little shredded cheese on the top and bake it till the top is browned.

Do you think those ingredients would go good together or should I call Pizza Hut? lol
I've already cut up and cooked the chicken but I think I'll do as you suggest Darren, and leave the avocado mixture uncooked.

This sounds good actually, but you may want to think twice before cooking avocado. When avocado is heated, it gets a really strange and unpleasant consistancy. It has a relatively high fat content for being a fruit, so it sort of melts and gets all weird.

My suggestion is to keep the chicken breasts whole, and pan-fry them with the garlic, etc until golden brown. Transfer them to the oven and finish cooking. Then, serve them with the mashed avocado, tomato, seasonings, cilantro and chopped onion (a basic guac) on top. Sounds delish!

Serve it with a nice salad and youve got an amazing dinner.

Probably one of the best known entertaining dishes is Buffalo wings. Legends about how Buffalo wings came to be vary, but the most accepted version is that the wings were created at the Anchor bar in Buffalo New York when a restaurant owner needed a snack for hungry patrons and decided to fry and then dip chicken wings (which were normally discarded) and serve them with celery stick and bleu cheese dressing. The wings were such a hit that the restaurant became famous for making them and versions of the recipe exist at nearly every sports bar in the country. Buffalo wings are a great dish, whether you are entertaining sports fans in your home or just want a tasty appetizer before a meal. Chicken parmigiana is great served with pasta, bread, or vegetables and is a guaranteed to be a family favorite.

Chicken curry is a dish that originates in the Punjabi area of India. While recipes vary, the typical chicken curry consists of chicken in a sauce made of onion, tomato, and yogurt with ginger, garlic, chillies and spices. Pre-made curry powders are readily available, and creating a chicken curry is a fast dish that goes well with traditional Chapati, or with rice. The dish has an Asian flair, and can be very spicy or mild, depending on what you like. Creating a chicken curry will make you the hit of any potluck, as people will find that they can't stop eating this yummy dish.

In the winter, there is nothing more warming than a bowl of chicken tortilla soup. If you are a fan of crock pot cooking, try out the large number of different tortilla soup recipes that are designed to simmer in the crock pot all day and give your family a filling warm meal when you get home. Baked Breaded Pork Cutlets

baked breaded pork cutlets
What's for dinner?

Since school is out for summer, and I have about one more week before summer school starts, I decided that I was going to spend some time making some of my best meals and dishing up plates for the homeless. If you were going to cook for someone else, what would you be preparing? My menu today is: Baked garlic chicken and dressing with gravy, pork cutlets in cream soup, fresh turnip greens with green onions, tomatoes and pickeled beets, candied apples with cinnamon, fried sweet corn, corn bread, homemade lemon ice tea, hand churned vanilla/toffee ice cream with homemade chunky chocolate chip cookies (the size of your hand!)

Cooking is an exploration if you have that much time and funds on your hands, try some recipies you havent tried before such as brushcetta chicken with angel hair pasta and garlic bread, a lightly tossed ceaser salad w/ chickpeas (garbonzo beans). For desert i would go with something basic because of the acidity in the tomatoes in the brushcetta chicken like a cake or possibly a apple pie or even apple crisp a la mode. to look for recipies try Kraft foods, Olive Garden, Food network and Reccipezzar They are all great websites

Barbecue Chicken Pizza Recipe

Cooking: - Crock-pots are the Single Greatest Innovation to Hit the World

Men are notorious for not cooking. First, they have mom doing all the cooking. Then, if they dare live alone for a while, they cook for themselves, usually a small repertoire of meals that consists of ravioli in a can, Spaghettios, rice and/or ramen noodles.

Eventually, they meet that "special someone" and might do some cooking to impress said "special someone", at which point what they are actually doing is finding their favorite restaurant that isn't "John's Pizza”.For more details www.thanks-giving-recipes.com.From this special restaurant, they order their favorite meal and serve it on their own plates. Finally, they marry that special someone and they no longer have to cook again, unless it involves charcoal briquettes and lots of starter fluid, and then they'll cook all day, every day, so long as there's fire.

Men are hunter/gatherers, not cooks or chefs. They bring the meat, the women in their lives cook the meat. This is their primary thought process and they cling tenaciously to the idea when the truth of the matter is this: if men really wish to impress those around them with their culinary skill, discover the crock-pot. Crock-pots are the single greatest innovation to hit the world in the 20th Century and their versatility and ease of use is what makes them so brilliant.

With a crock-pot, men can cook a great variety of meals, all designed to fill, be flavorful and please. Having a yen for barbecue chicken wings but don't have time at the end of a long, tiring day? Before leaving the house in the morning, toss the wings in the crock-pot, cover them with your favorite barbecue sauce, set the crock-pot on low and head out the door. For more details www.300-chicken-recipe.com.Hoping for something more substantial? Cut some beef into cubes, open a can of potatoes, a can of carrots, maybe some peas, toss in some beef bouillon cubes, a couple cups of water, turn the crock-pot on low, and go. Really married to the idea of ramen or ravioli from a can? A crock-pot can do that too, only it requires much less interaction with the cooking process than previously.

Coming home of an evening is when you realize the benefit of this magnificent device, the crock-pot. As you open the door, the aromas of a wonderful meal greet you, beckoning you like a siren's song, with the result being not crashing on the rocks but a delicious dinner. You will congratulate yourself in having the forethought to create a magnificent meal!

Another plus to using a crock-pot is the ease in cleaning. Once the meal is done and the leftovers are put away, there's one piece to clean, the interior (usually ceramic) liner. You can leave the crock-pot turned on high and let water, with dish soap, sit inside for a couple hours, then wipe. Another quick clean is to rinse it out and put it in the dishwasher; no muss, no fuss. Cleaning the crock-pot after use is one of the greatest features, reducing cooking implements down to one "pan", a large spoon and perhaps a knife.

For men, a crock-pot is truly a change for the better, permitting them to create meals that will impress. Crock-pots, also called slow cookers, require no recipes; simply ingenuity and a desire for more than food from a can. Surprise your mom, girlfriend, wife or friends with a well-balanced, seemingly thought out meal that will look as though you spent hours or days planning and preparing.

Do I need to put breaded chicken breasts into the fridge before baking?

The recipe I have says to put the breaded chicken breasts into the fridge for a few hours before cooking. Do I need to do this?

http://www.recipe.com/mustard-crisp-chicken-1/

not seeing the recipe you are making I cannot imagine why you would have to chill them before baking. Are you sure it is not box instructions saying to defrost them in the fridge for a few hours before?
