When making good gourmet pizza, you think about the quality of the ingredients, fresh toppings varying from seafood to pork to vegetables, and the different types of pizza sauce and crust. But what about the pizza peel?
What is a Gourmet Pizza Peel?
A pizza peel is a large looking flat paddle used in pizza restaurants to go a pizza. Some are square, rectangular or round on the end. It preserves the pizza when having to take it in and out of the oven. This also holds the flavor together rather than dispersing during transport. But it is not as easy to use as it appears. Here is a closer look on how to use it when presenting the pizza on your next pizza family night impressing the kids and the adults alike.
How to Use a Pizza Peel
You need to first prep the pizza peel ensuring the dough will slide off with ease. There are different ways to do this. Two simple ways is to use parchment paper or cornmeal. This will make it simple for the raw pizza dough to slide off right into the oven.
Now it is time to make the pizza right on the peel. You may utilize whole wheat rather than white flour. Just be careful of any grains that fall off the peel becoming trapped in your pizza stove. For these will burn.
Next, add whatever toppings you like to a gourmet pizza. Make it appetizing for all taste buds in your household. Perhaps one person would prefer a potato and egg pizza. Alternatively, you could make a white sauce pizza. Just make it as unique or traditional as you prefer. Think about what toppings and cheese or no cheese pizza you shall create. Your family will truly feel like they are dining at a gourmet pizza restaurant with this level of expertise in pizza cooking displayed.
Once everything is completed, you just pop the pizza in the oven using your new favorite kitchen tool. After the pizza has cooked accordingly, slip the pizza back out with it. It is a simple method. No oven mitts needed. No additional hot pans required. No messy clean-up. The whole house will be impressed and look forward to family night.
Don't turn on your oven this summer…Instead grill everything!
Whether you use a small barbeque or a built-in outdoor kitchen, as long as you have a heat source, you can make a variety of tasty healthy recipes.
Grilled vegetables make a great side dish and you can cook them in many different ways, such as directly over the heat, threaded onto skewers or in foil with seasoning.
You can grill bell peppers, onion, mushrooms, tomatoes, zucchini, asparagus, eggplant, corn on the cob and so much more. (Adding chunks of pineapple can add a lot of sweetness and flavor). You can grill vegetables without any fat, such as butter or oil, which can be a very healthy choice. You can even grill pizza!
Here is a sample of an entire meal without turning on the oven…
Peach Salsa to accompany your favorite Grilled Chicken, Pork or Fish Ingredients:
2 cups diced peeled peaches
1 medium lime or 1/2 tablespoon lime juice
1 to 2 teaspoons finely minced fresh jalapeño chile pepper
1 tablespoon chopped fresh cilantro
1 clove fresh garlic, minced
1-2 tablespoons peach nectar
Dash salt & freshly ground pepper
Honey, to taste, if desired
Combine all salsa ingredients. Let stand approximately 45 minutes or refrigerate for a few hours before serving. Top on your choice of Grilled Chicken, Pork or Fish Serves 4 to 6.
Healthy Fresh Corn on the Cob wrapped in Aluminum Foil
Ingredients:
Corn on the cob
Olive oil
salt and pepper or any of your favorite seasonings
Preheat an outdoor grill for high heat.
Husk each piece of corn, rinse & dry.
Roll each ear of corn in olive oil & season with your favorite seasoning.
Wrap tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.
Medley of Grilled Vegetables
Pre-heat grill to your normal grilling temperature.
Wash and dry vegetables of your choice. Chop into 1 inch pieces or larger. Place in a large bowl, drizzle with olive oil & seasoning, toss until evenly coated.
Lay out a medium to large sized sheet of aluminum foil, it's best to use heavy duty foil, and spray with non-stick spray. Pour your vegetables out onto the foil sheet and then cover with an equally large piece of foil. Fold the edges up, fold the edges together and crimp them up so you have a sealed pouch that will not leak liquids or steam.
Grill for approximately 20 minutes, flipping the pouch over after 10 minutes.
Be sure when you take foil off vegetables you wear oven mitts to protect from steam.
If you are grilling other items like steaks or burgers give yourself at least 20 minutes to grill your vegetables. Time your meats or other sides accordingly.
Grilled Salad •2 Heads of Romaine Hearts •2 Tbsps Olive Oil •8 Tbsp Vinigarette Dressing •¼ Cup Gorgonzola Cheese
Wash, dry, then cut the romaine in half, lengthwise keep the end in tact so it stays together. Rub the outer exposed leaves with olive oil to prevent scorching. Sprinkle cheese inside the leaves. Place on hot grill for about 2 minutes then flip over for one more minute. Place romaine on the top shelf of the grill so the bottom doesn't cook any more. Close the lid for just a minute or 2 until the cheese starts to melt. Drizzle with your favorite dressing. Serve immediately.
Grilled Bananas
4 bananas
1 tablespoon lemon juice
1 cup brown sugar
1 teaspoon ground cinnamon
2 cups vanilla ice cream

This vegan, high fiber, high protein dough is suitable for pizza, focaccia or Italian bread. The dough has 250% the protein, four times the fiber and only 60% the net carbs of normal pizza dough. It saves you 20% of the calories in the dough and it tastes great- just like a conventional pizza dough.
All this is achieved by substituting Carbalose for half the flour. If you are following Atkins or any kind of low carb diet, you can substitute Carbalose for all the flour and end up with a pizza dough with practically no net carbs. You can buy Carbalose at Netrition.com. You can get barley malt at whole foods or any shop that sells beer making supplies. It helps the dough rise.
In large mixing bowl, blend together
* 3/4 C. flour * 3/4 C. Carbalose * 1/4 t salt * 2 t yeast * 1 t Italian spices * 1/2 t konjac (optional)
Dissolve in
* 5/8 C warm water (approximately 110F)
* 1/2 t barley malt * 1 drop sweet-ez or one packet splenda.
With mixer running, add liquid ingredients to dry ingredients. When mixed, insert dough hook and kneed for 3 minutes. Cover with a towel and permit to rise until almost double (approximately 1 hour). Punch down, permit to rise until almost double.
Just before next punch down, preheat pizza stone to 500F; let stone heat for at least 10 additional minutes
Punch down dough, and kneed to remove air. Roll into a 12? diameter pizza crust. Spread lots coarse corn meal evenly over entire pizza peel and place pizza crust on peel. Spray top of crust with oil, cover with a damp towel and allow to rise approximately 10 minutes. Before topping, check to be sure crust will slide off pizza peel. (It's easier to fix now than after topping! If it doesn't slide, use a spatula to break off stick bit and place on a cookie sheet or a second pizza peel. Then, later put cookie sheet on baking stone. Continue with directions.)
Top crust with your preferred toppings: (eg. sauce, veggies, pepperoni, cheese etc.) Slide onto pizza stone; turn oven temperature down to 450F. Back approximately 15 minutes until top is brown or pizza cheese is bubbling. Remove from oven. Allow to rest 5 minutes; cut into 8 slices.
Nutrition:A pizza made using this crust usually serves 2-3 people with some people eating 2 pieces and some eating 4. Nutrition information is for the dough only, and is per slice with pizza cut into 8 pieces.
