Here's How To Bake Gluten Free Oatmeal Cookies

More and more people are being told by doctors across the country that living gluten free may be a good choice for them. Some of them are diagnosed with celiac disease; some have issues with ADD etc. At first glance this may mean no more pizza, bread, pasta and even cookies. We've come a long way since the early days of gluten free living. There are now thousands of products and many thousand gluten-free recipes out there for you to enjoy. Take this gluten free oatmeal cookie recipe for example.

Gluten Free Oatmeal Cookies

  • 1/2 cup butter

  • 1/2 cup light-brown sugar

  • 1/4 cup sugar

  • 1/2 tsp vanilla

  • 3/4 cups gluten-free flour

  • 1/2 tsp baking soda

  • dash of table salt

  • 1/2 tsp cinnamon

  • 1 large egg

  • 1/2 tsp xanthan gum

  • 1 1/2 cups gluten free oats

  • 1/2 cup raisins (or other dried fruit)

Preheat the oven to 350 Fahrenheit. Set out the butter or margarine so it has a chance to soften. Cream the butter and both the brown and regular sugar with a hand mixer or use your kitchen mixer. The egg and vanilla should be incorporated next. Take your time and keep blending until you have a smooth, creamy mixture.

Sift together the flour, soda, salt, cinnamon and gum in another bowl. Give those dry ingredients a good stir, then work it into the egg mixture. Finish the batter by adding the oats and raisins and mixing everything together.

Scoop one tablespoon of batter onto a greased baking sheet per cookie. Keep working until you have your cookie sheet filled up. You can either use two soup spoons for this or a melon baller.

You should bake these oatmeal cookies a good ten minutes. A golden brown color will let you know that it's time to take the oatmeal cookies out of the oven. Let the cookies cool for a good five minutes on the sheet, then move them to a wire rack. Keep them in an airtight tin if there are any leftover. You should end up with about 24 cookies.

Of course you don't have to bake all your cookies and other gluten-free treats from scratch. You can get all kinds of baking mixes and even finished gluten free products at local grocery stores and online at websites that specialize in gluten-free products. They are the perfect alternative. There are even some premade cookies that you can purchase that taste pretty decent.

In short, you do not have to give up on your favorite treats when you have to switch to eating gluten free.

Egg Bake Recipe With Bread

Turkey and Country Sausage Corn Bread Stuffing

Whether or not you are cooking for a holiday, family gathering or just wanting to prepare an economical meal , turkey and dressing or stuffing is a great choice.   Following is an old-fashioned recipe from my vintage recipe collection.  This is a recipe that was clipped from a newspaper and kept in my mother's old metal recipe box.  The stuffing combines cornbread, white bread cubes, and crumbled sausage for a tasty nostalgic meal.  Let the young ones participate by helping to mix the stuffing or stuffing the turkey.  I can still remember doing such chores with my mother and grandmother many years ago.  Many people like to stuff the turkey while others like to bake the stuffing separately.  Either way works fine and the recipe tells how to do it either way.  No matter which way you choose, you are sure to enjoy this turkey and stuffing meal.

TURKEY AND COUNTRY SAUSAGE CORN BREAD STUFFING

2 cups celery slices
1 cup chopped onion
1/4 cup butter or margarine, melted
1 8 or 9-inch square pan of cornbread, crumbled
6 cups soft bread cubes
1 lb pork sausage, crumbled, cooked, drained
1/2 to 1 tsp sage, according to taste
10 1/2 oz can condensed chicken broth
3/4 cup water
2 eggs, beaten
12 to 16 lb turkey, if desired

In small skillet, saute celery and onion in butter until tender. In a large mixing bowl, combine celery mixture, cornbread, bread cubes, sausage and sage; mix together well. Add broth, water and eggs; toss lightly until bread is thoroughly moistened. Add 1/2 cup more water if you desire a more moist dressing. Lightly spoon stuffing into body cavity and neck region of turkey. Truss and roast according to turkey roasting directions. Makes enough stuffing for one 12 to 16 lb turkey. Place any leftover stuffing in a buttered casserole dish. Cover and bake the last 35 to 40 minutes of the turkey roasting. If you do not want to stuff a turkey, put the stuffing into a large baking dish and bake 35 to 4o minutes at 350 degrees.
Enjoy!

Bread With Baking Powder

bread with baking powder
what are the brown specks in banana bread?

I made banana bread in my bread machine with these ingredients:
eggs
butter
milk
mashed bananas
bread flour
sugar
baking powder
baking soda
salt

All of the ingredients were fresh and appeared normal, but the bread (which tasted and smelled normal) had little dark brown specks in it, and I'm not sure what caused them. The specks were of irregular shape, and about the size of poppy seeds. They were evenly distributed, with about 5 to 10 of them per square inch. Any insight you have as to the cause would be appreciated, I'm very curious.

It's the banana. When it's cooked it turns that color. Like how you leave an open banana out and then like 10 minutes later it turns black. That's what that is.

Mark's Organic Banana Bread (Gluten Free)

Spring is here in Australia and at Organic Island we're out and about enjoying it.

There’s lots of hype about “organic food”, so I thought I’d share my favourite recipe using organic ingredients sourced from my local market (Nundah).

To learn more about the brilliance of organics - go to http://www.organicisland.com.au/lipbalm/about_organics.htm

Here's my favourite organic recipe - I hope you enjoy!

Organic Banana Bread (Gluten Free)

I picked up this recipe while working in the USA.

I became addicted to the Banana Bread my colleague’s mother used to make. She loved to cook great food with great friends. This was one of the easiest recipes and
was an excellent staple for a busy week ahead - perfect for spring. This can also be used for packed lunches or a day outside with family.

Ingredients

  • 2 ½ cups gluten free all-purpose flour mix
2 tsp gluten free baking powder
    2 tsp cinnamon & nutmeg
    1 cup brown sugar
    100g shredded coconut
    1 egg, lightly beaten
    2 egg whites
    300ml milk
    50g butter, melted
2 Organic medium ripe bananas, mashed

Method

1. Preheat oven to 180 degrees Celsius. Line a 10cm X 23cm loaf tin with baking paper.
2. Sift flour, baking powder, cinnamon & nutmeg into a bowl. Stir in the
sugar and coconut and make a well in the centre.
3. Whisk together the eggs, egg whites, milk and butter, pour into the well
and stir until just combined. Fold in the mashed bananas.
4. Spoon the mixture into the prepared tin and bake for 1 ¼ hrs or until a
skewer comes out clean when inserted into the centre.
5. Serve warm, cold or toasted, with your favorite spread (I've seen both
organic strawberry jam, Vegemite and butter used with great enjoyment)

Old Fashion Bread Recipes You Will Love

Do you remember the smells of homemade bread when you walked into the house?  Homemade breads were a staple in homes years ago.  And many of us remember those breads fondly!  If you would like to create your own memories with homemade breads in your home, this article offers you that chance.  Linda's Cranberry Bread is a yummy sweet bread and the Zucchini Raisin Muffins offer another good use for zucchini.  The Grilled Hickory Cheese Bread starts with a loaf of French bread but the additions make it homemade!

LINDA'S CRANBERRY BREAD
2 cups sifted all-purpose flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/4 cup butter
1 egg, beaten
1 tsp grated orange peel
3/4 cup orange juice
1 1/2 cup light raisins
1 1/2 cup cranberries, chopped

Preheat oven to 350 degrees. Grease a 9 x 5-inch loaf pan and set aside.

Into a large mixing bowl sift the flour, sugar, baking powder, salt, and baking soda. Cut in the butter until the mixture is crumbly. Add the egg, orange peel and orange juice to the flour mixture, stirring just until the mixture is moist. Gently fold in the raisins and cranberries.

Spoon the batter into the prepared loaf pan and bake at 350 degrees for 1 hour and 10 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from oven and let sit for a minute or two then remove from pan and cool on a wire rack.

TEXAS-STYLE ZUCCHINI RAISIN MUFFINS
These muffins were a very popular item years ago at a now defunt Dallas, Texas cafeteria. They shared this recipe with the public before closing down.

2 large eggs
1 cup sugar
1/2 cup vegetable oil
1 tsp vanilla
2 cups unpeeled shredded zucchini
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 cup raisins
1/2 cup chopped pecans, optional

Preheat the oven to 350 degrees.

Combine the eggs, sugar, oil, and vanilla together, mixing well. Add th zucchini; set aside.

In a separate bowl combine the flour, baking soda, baking powder, salt and cinnamon. Toss 1/4 cup of the mixture with the raisins and pecans.

Make a well in the center of the flour mixture. Add the zucchini mixture to the well of the flour mixture. Stir just enough to moisten. Stir in the raisins and pecans.

Spoon mixture into 24 greased muffin cups, filling each about 3/4 full. Bake at 350 degrees for 20 minutes.

GRILLED HICKORY CHEESE BREAD
1 loaf French bread
1/2 cup butter, softened
1 cup shredded natural sharp Cheddar cheese
1 tablespoon snipped parsley
1/2 teaspoon hickory smoked salt
2 teaspoons Worcestershire sauce

Cut the bread diagonally into 1-inch slices. Mix together the butter, cheese, parsley, smoked salt, and Worcestershire sauce. Spread the mixture on the cut slices. Reassemble the loaf and wrap securely in a 28-inch x 18-inch piece of aluminum foil. Place on the grill 4-inches from medium hot coals. Heat 15 to 20 minutes, turning once.

Makes 6 to 8 servings.

Enjoy!

Working with Chocolate

Did you know different types of chocolate require different methods for cooking, and when melting chocolate it is best to use a metal spoon as wooden and plastic spoons retain moisture that will cause the chocolate to seize?

Many dessert recipes will require you to melt chocolate in a double boiler. This is really easy to set up. All you need is a glass bowl big enough to hold the chocolate and at the same time fit into the top of a sauce pan without touching the bottom. In the sauce pan you simply boil water and then place the bowl of chocolate pieces on the top of the pan, stirring constantly until the chocolate is smooth.

Fresh fruit can be a perfect and light ending to any meal. You can give it that little something extra and have melted chocolate on the table to dip the fruit into. Satisfy everyone's taste buds.

Baking Bread Pudding

Sugar-Free Baked Goods That Taste Sweet and Delicious

Just because you have decided to cut out on sugar doesn’t mean that your sweet tooth has to suffer as well. There are so many delicious ways to get around a sugar restriction that you’ll never even miss having sugar in your diet. If you’re a baked goods fan like I am then you’ll find all sorts of recipes which you can use sugar substitutes and other types of sweeteners. You’ll also find that there’s a plethora of sweeteners on the market, including a few made specifically for baking. These tips will help you to create sugar-free baked goods that are as sweet and delicious as those made with regular sugar.

Get to know your sugar substitutes.

Use Splenda Granulated for desserts and baked goods that rely on sugar mainly for taste and sweetness. It’s ideal for use in puddings, custards, ice cream and even cheesecake. Splenda Granulated is also the sugar-free sweetener of choice for quick breads, muffins, cookies and pies.

Things to Know About Baking with Splenda

Splenda Granulated is designed to measure and pour like sugar. One cup of Splenda has the same sweetening power of one cup of sugar.

Splenda can be used in microwave cooking and baking without losing its sweetness, as well as in high altitude baking.

Splenda Blend is the ideal sugar substitute in baked goods like brownies, candies and layer cakes. Because it contains only a small amount of sugar, it gives the volume, browning, moisture and texture that you expect in those recipes. To substitute Splenda Blend for sugar in your recipes, use ½ cup of Blend for every cup of sugar.

Other Sugar Free Baking Tips

Baking with sugar substitutes isn’t exactly like baking with regular sugar. Because sugar does more than just sweeten your baked goods, you may need to make a few other changes in your recipes in order to get the best results.

-         To get the height you expect in layer cakes and quick breads, try baking in 8” cake pans instead of 9” cake pans.

-         For a better rise, try adding ½ cup nonfat dry milk powder and ½ teaspoon of baking soda for every cup of sugar substitute when baking layer cakes.

-         If you’re making custard sauce, pudding or cookies, add an extra teaspoon of vanilla to the recipe to intensify the sweetness.

-         Keep in mind that yeast recipes need real sugar in order to activate the yeast. If you’re making yeast-raised breads or other goodies that rely on yeast, keep at least two tablespoons of sugar in your recipe to activate the yeast.

-         If a pale cake won’t do the trick for you, try spraying the surface of your cake with cooking spray just before baking. Sugar substitutes don’t caramelize like sugar, so you won’t get browning unless you take other steps to get that lovely baked look to your breads, cakes and cookies.

-         Recipes made with sugar substitutes tend to bake faster than those made with sugar. If you’re baking with a sugar substitute, check on your baked goods a few minutes before the recipe calls for to make sure that they don’t overcook. Your cakes may be done up to ten minutes sooner than you expect, and cookies or brownies could be finished up to seven minutes early.

-         Try adding some additional sweetness by using fruit puree to replace some of the shortening or moisture in fruit breads and muffins.

Baking with sugar substitutes does take a little bit of practice to get consistent and reliable results. However, the same could be said about baking with regular sugar. Once you start baking without sugar on a regular basis you may actually find that you like the flavor and the results of your food much better than sweet baked goods made with sugar.

Apple Bread

Cheaper Bread from a Breadmaker?

Fresh baked bread may seem like a luxury to many people. Purchasing bread at a bakery or even in the bakery section of a supermarket or a department store can cost upwards of four to five dollars! And that's if you want it when it's fresh. Of course, you can always go to the reduced rack and pull a loaf from there, but then you're running the risk of getting a stale loaf. Which is why, if you want your bread to be fresher and of higher quality, you may want to look into making your own bread at home. And, if you're pressed for time, why a breadmaker is a great investment.

Is it really more cost effective?

Yes, actually. Purchasing the ingredients to make your own loaf of bread at home actually equals out to being more cost effective over time. When figured out, making bread at home works out to anywhere between $1.50 to $2.00 per loaf, depending on where you live and what the cost of ingredients is. That's practically half the price of fresh baked bread from a bakery!

But what about value loaves?

Of course, you can always bring up the subject of the value loaves of bread that are anywhere from $0.85 per loaf on up to $1.00 per loaf. But here, you're sacrificing on the quality of the bread. The value loaves have been pumped full of additives and preservatives to mask lower quality ingredients and to increase shelf life. This is how they are able to cut costs and price it so low. And that's why, when you're talking about the cost effectiveness of making bread at home, you've got to compare apples to apples. Fresh bread compared to prepackaged bread is like comparing rye bread and pumpernickel. They're breads, yes, but of two completely different kinds.

I simply don't have the time!

Everyone is pressed for time. And if you're on a busy schedule, you may not be home for a couple hours to make some bread. Or, you may simply be too busy around your home - working from home, maybe you've got kids, or maybe you've got a lot of work you've brought home with you. This is where kitchen gadgetry really can be a lifesaver. When you have a breadmaker, all the work of making a loaf of bread is taken out of the equation. Because the breadmaker does it all for you, and the breadmaker can even be set up on a delay to start making the bread while you're still at work or while you're sleeping!

And, when properly cared for, a breadmaker can last you quite a long time. Some people have breadmakers they've been using for ten years! All you have to remember is to invest in a quality breadmaker.

The thing to remember when figuring out cost efficiency of making bread at home is to compare breads appropriately. There's more to it than the final dollar, of course, when you factor in health benefits and better quality bread. And while it may seem like a big investment up front, if you've got yourself a quality breadmaker, as with any other kitchen appliance, you'll see that the cost efficiency always works out in the end!

Sugar Cookie Pizza Recipe

sugar cookie pizza recipe
PLEASE ANSWER ! (: EASY ! 10 points !?

i am doing a little christmas with my 2 little brothers ! (:

i got them each a stocking, but i got the older one (gabe) a chocolate orange, and the younger one (tj) a chocolate santa, and gummy lifesavers.

i got gabe a binder with a cover saying "Gabe's Pokemon" & it has those 9 pocket holder things inside with 60 new pokemon cards. & i am going to make him caramel candies !

i got tj an easy bake oven (comes with 3 mixes- which should i take them out and wrap them separately ? he is 6), & i made him a booklet of easy bake oven recipes. i am going to make him a "cookie pizza" which is chocolate and marshmallows on top of a sugar cookie

Does this sound even to you ? i don't want one of the boys thinking that they have less than the other ! i will have spent the same amount on both... i am worried about gabe, but he is very understanding, and he will only have one thing to open ! (plus the caramel)

if you are worried about gabe try getting him something else to make it more even
maybe a pokemon dvd for example kids sometimes like to have gifts even with their siblings so there will be no jealousy

Recipe for a Southern Staple - Bread Pudding With Nutmeg Sauce

I have just never been able to master a desire for bread pudding.  I know it is very popular, especially in the south.  Being a native Hoosier now living in Texas, I am thankful Texas is not really considered the South even though we border the Gulf of Mexico and Mexico.  Here we are more concerned with Tex-Mex than bread pudding.  Strange at it sounds, my first experience with this southern delight was when I lived in New York City!  But for you Bread Pudding afficianodos, here is a recipe featuring nutmeg sauce.

BREAD PUDDING WITH NUTMEG SAUCE
1 cup dry bread crumbs (not fine)
2 cups milk
1 cup sugar
1/2 cup butter
2 tbsp molasses
1 1/2 cups all-purpose flour
1/2 tsp cinnamon
1/2 tsp allspice
1 tsp baking soda
1/2 tsp ground cloves
1/2 cup raisins

Preheat oven to 325 degrees. Butter or spray a 2-quart casserole dish or baking pan; set aside.

Put the bread crumbs in the milk and set aside to soak.

In a medium mixing bowl cream the butter and sugar together. Add the molasses and blend in. In a small bowl combine the flour cinnamon, allspice, ground cloves, and baking soda. Mix the flour mixture into the butter mixture. Stir in the bread crumbs and milk along with the raisins. When well blended, pour into the prepared casserole dish or pan. Bake at 325 degrees until set, about one hour.

NUTMEG SAUCE FOR BREAD PUDDING

1 cup sugar
2 tbsp cornstarch
2 cups water
1/8 tsp nutmeg

In a heavy saucepan combine the sugar and cornstarch. Add the water and cook over medium heat until thickened and clear, stirring almost constantly. Remove from the heat and add the nutmeg, stirring well. Serve hot over the bread pudding.

Enjoy!

1 c. milk
1 tsp. baking soda
2 c. flour

Mix together all the above ingredients and make a layer in a greased bread pan. Mix 1 tablespoon cinnamon and 1/2 cup sugar. Sprinkle over layer of dough.
