Convection Oven Bread Baking

The answers to all of these questions are based on the concept that the density of a material decreases as the temperature increases. A change in temperature will cause a change in density, and if the material is a solid or liquid, then the less dense portion will rise to the top, and more dense portion will sink to the bottom.

In short, hot air goes up and cool air goes down.

The same is true for water. Hot water goes up and cool water goes down.

1. The heating element is placed at the bottom of the kettle, causing the warmed water in the bottom of the kettle to rise and the relatively cool water at the top to come down. The flow of the water creates a convection current and allows all of the water to be heated efficiently.

2. The cooling element is placed at the top of the refrigerator, causing the cooled air in the top to sink and the relatively warm air in the bottom to come up. The flow of the air creates a convection current that cools all of the air efficiently.

3. I always use the top shelf in the oven because it's the easiest to reach, but I don't know why it would have anything to do with convection. I suppose placing the bread as far as possible from the heating element would allow for the most even cooking, but many ovens have heating elements at the top as well as the bottom. I'd say it really depends on the construction of the oven and the type of bread.

4. The air surrounding a flame becomes very warm and rises rapidly, carrying the smoke away with it.

5. A lid on a saucepan prevents the warm air from rising out of the pan and prevents relatively cool air from sinking into the pan.
