How do i prevent this to turning to mush?
I want to bake my chicken cutlets, its now marinating in a garlic sauce, and spices, i want to add onion and bread crumbs, and bake... but how do i do it without the crumbs turing mushy, i want them crispy.
Since they're cutlets, you don't want to pan fry them?
I would suggest cooking the cutlets on a rack... so the cutlets aren't sitting in a puddle of the juices which is what causes them to sog out. If you do use a rack, you may want to drizzle some butter on top of the cutlets so they oil will help brown things and add a nice flavor.
