What Makes a Recipe Italian?

Most fine dining restaurants offer Italian cuisine. But what makes a recipe Italian? Some splurge on the usual ingredients: cheese, pasta, and wine. They think that they are already serving Italian dishes with these. Is it really Italian?




 




Typically, Italian dining follows four meal courses. In the first course called privo, dishes that are more filling like pasta or risotto are served. Secondo or second course usually serves the main dish which is either fish or meat. It is followed by dolce or the sweet, then coffee finishes the long meal. So how do you know if it is really Italian?





To start with, Italian ingredients range from fruits, vegetables, meats and sauces. Varying according to region, the commonly used ingredients in the North of Italy are fish, potatoes, rice, corn, sausage and different types of Italian cheese. In Liguria, chefs keep in handy ingredients like numerous types of fish and seafood varieties, plus basil, nuts and olive oil.




 




Chefs in Emilia-Romagna complete their dishes with prosciutto or ham, cotechino or sausage, hard granular Italian cheese, various kinds of salami, truffles, grana and tomatoes. Fish varieties like anchovies, sardines and tuna are very important for recipes in Southern Italy. In addition, residents spice it up with peppers, olive oil, artichokes, oranges, ricotta cheese, eggplants and zucchini.




 




When you check out pasta, it is distinguished usually according to its shape like penne, maccheroni, spaghetti, linguine, fusili, lasagna and others. They vary in lengths, widths and shapes. When it comes to Italian cheese, there are 400 kinds. There are soft and hard cheeses. Soft cheeses include mozzarella which is popularly used in pizzas; gorgonzola which is used as a dip for salads; and mascarpone and ricotta which are found in lasagna and desserts. Hard cheeses are cooked but not pressed; they are used to create flavorful sauces.




 




Traditionally, Italian breakfast serves Caffe latte or hot coffee with milk. Some enjoy it with bread roll, butter and jam. It is during lunch or pranzo where you can taste cold meats and hams which is taken before privo. Since it serves the heaviest meal within the day, there are different kinds of Italian meat you can choose from. It can be cappicola, a dry cured meat which is harder and more circular than prosciutto. For your sandwich or crackers, you can pick sorpressatta, an aged and cured pork salami. If you want to go heavy on Italian sausage made of beef and ground pork, simply choose mortadella. For light cravings of meat, it's either you have smoked or unsmoked salami or spicy pepperoni.
