Bread Machines Gluten Free Baking

when baking bread, what can substitute for shortening & what to place over dough in rise cycle besides plastic?

I'm baking white bread (not with a bread machine). The recipe calls for 2 TBSP shortening. Can I substitute another fat for this? I want to avoid trans fats. And then it wants me to cover the dough with plastic wrap during the rise cycles, but I don't want to use so much plastic wrap (one of the reasons I'm baking my own bread now is to save money) I'd like to use a towel or something reusable. Will these changes work if I need to go gluten free in the future? (My youngest might be wheat or gluten intolerant)


You can substitute equal measure of vegetable oil or margarine.
Traditionally, bakers used a dampened tea towel over rising dough.
