Why does my convection oven underbake?

I am new to convection ovens. When I try to bake bread following the oven's instruction manual, the bread takes forever to bake all the way through. The oven auto sets the temp to 25 degrees below my setting. The oven is not crowded. The manual says nothing about rack placement so I put the loaf in the middle of the oven. The fan is spinning. Am I doing something wrong? Or is my oven malfunctioning? Or??
To clarify - the oven instructions say to enter the normal baking temp and the oven auto lowers it by 25 degrees. So that is what I have done.
Oh yes, and I am using an oven thermometer to make sure the temp is correct.
