What is your favorite pizza dough recipe?
Do you cook it before putting toppings on?

This is my new favorite--it's crispy, thin, chewy bite, great taste. I mix it up, knead it, let rise for about an hour or so and keep in the fridge until I want it--up to a week or two. Let warm up almost to room temp. Roll out and top before baking. Bake in a hot oven on a pizza stone. I heat the oven to 500 degrees and bake about 10 minutes.
Pizza dough
2 3/4 cups lukewarm water
1 1/2 packets yeast
1 tbl salt
1 tbl sugar
1/4 cup olive oil
2 cups all purpose flour
1 cup semolina flour
3 1/2 cup bread flour
For a sauce, I saute about 4 fresh cloves of crushed garlic in olive oil. Add a good teas of oregano and salt and cook until garlic is fragrant. Add in a can of crushed tomatoes and cook until it seems to thicken a bit. Tunr off heat and add a good teas of basil and a 1/2 teas of sugar. Let sit while you stretch or roll your pizza crust.
Be a little stingy when you add your sauce to the crust esp be stingy in the center of the pizza so it's not soggy.
Cheese--I use a combo of grated cheese and sliced cheese. Do not use the pre-shredded bags of cheese. Seriously. Just once try it with the blocks of cheese that need to be grated or cut up. Makes a world of difference. anyway, I first sprinkle some cheese around that I grated and then I use thin squares of sliced cheese to fill in the gaps. Then when it bakes, some of the cheese gets that browned yummy texture and taste and look and some of it just melts and looks lovely.
