can I use a microwave to bake whole wheat flat bread with no leavening?
I have been using a microwave to bake my own flat whole wheat flour bread (also add eggs) that has no leavening agents.....it tends to be soggy in the middle so I end up stirring it and then baking it again by using the microwave....It looks like warmed up clumpy oat meal after cooked.....I don't mind eating it in that state but I know I am better off cooking it in a oven or a toaster....is this "bread" still good to eat though it technically does not look like bread.....I do notice that I get very full and somewhat a puffy stomach after eating this bread but I think maybe it's because it's whole wheat...I am concerned with digestibility and bread being undercooked. Cooking it any longer in the microwave would probably make it too hard.
You can, but you need something that gets hot enough to really cook it. I don't think you could ever make good bread in the microwave, it doesn't have the right properties. You can probably do better in a dutch oven with charcoal, in fact I know you can make excellent bread that way. It's all about the temperatures and continuity and consistency of the heat. Of course you can make unleavened bread over burners if you have them.
