Pizza Dough Recipe For Bread Machine

pizza dough recipe for bread machine
Bread machine pizza dough question?

I have some good hand-made pizza dough recipes that call for making a sponge with the yeast and water before adding the rest of the ingredients. But due to a wrist problem I have, it's hard for me sometimes to knead out my dough. I've made pizza dough in the bread machine before following the manufacturers' recipe and it was okay, but I'd really like to use my "good" recipes. Do I HAVE to add the ingredients in the specific order my bread machine wants, or would it work to just put my sponge in there and then the rest of the flour, etc. I just want it to do my kneading and rising for me. Thanks.
I do not have a stand mixer; woe is me! The recipe I want to use most actually calls for a stand mixer to mix the dough.

My bread machine is a liquids first/dry second/yeast last.

Do you have a stand mixer? If so use that to knead the dough. If not I think you could go ahead and make the dough and just use the bread machine to knead it. You may have to "babysit" it and let it go through the cycles empty until it gets to the knead cycle.
You may also be able to make the sponge and put that in along with the flour and proceed from there.
According to a bread machine cookbook I have it states:
"Ingredient order." Manufacturers indicate the order in which the ingredients should be put into the pan. In 9 out of 10 machines, you start with the liquid; in the other 10%, you begin with yeast and then flour. For example, DAK, Welbilt and Citizen machines call for yeast and flour in first, so the liquid will not leak through the hole in the bottom of the pan. For such machines, reverse the order of ingredients in my recipes, beginning with yeast. The really important point is that the liquid ingredients are kept away from the yeast until the machine starts.
This book does not have any recipes that start with a sponge.

For more information you mioght want to check out http://www.kingarthurflour.com they have some very good recipes and there is a way to contact one of the bakers and they will answer right away.

Good luck.
