which oven is better for sponge and bread manufacturing for counter sales, its deck or rotary and why?



Riketshi, I prefer deck than rotary. When I go to my baker, and go into the back, he has 5 large deck ovens. There are three of them that are making the dough and baking bread, from 1.30am. Then one guy about 4, starts on the cake orders. But the bread making continues till 9.00am.

Having static ovens he just doesn't bake bread and cakes he is also baking pies, mini pizzas, muffins, cupcakes.

I have tasted bread straight from the oven, with both types, personally speaking, I find the static oven bread tasted better.

Yeah ok I'm a mug, I don't stop at bread, I'm into the hot pies, and cakes also.
