Can you roast frozen vegetables?
I have a bag of frozen Mediterranean vegetables that I want to put in a chicken lasagna. I'm thawing them first as there will be a lot of water in them. (It's eggplant, zucchini, tomatoes, and peppers. ) Any point in throwing them in the oven? Or will it turn out to be a mushy mess?
I think it should be OK. Just make sure and pat the veggies dry before you put them in. Sound good!
