why is my bread dough sticky?

I have a bread making machine, and also bake by hand. I always follow the recipes to the letter as i know measuring ingredients correctly is vital, however, when I use the dough making setting in my machine and it then asks me to knead the dough at the end of the cycle, or if i'm doing it by hand from scratch, my dough is always extremely sticky, and kneading it doesn't improve it. What am i doing wrong? is there too much liquid in the recipe?


Different flours absorb different amounts of liquid. I've found (over the years) that cheaper flours tend to absorb more water so you just need to find the right grade of flour to suit your recipe and you're good to go! Or you can simply "play it by ear" (or by feel) as I do.

(I DON'T have a bread machine so I can usually gauge my dough pretty well.)
