what does yeast and baking powder do to the dough when you are making bread?
I am making a recipe called Hops Bread originated in Trinidad and Tobago.
Both yeast and baking powder are leavening agents - they make bubbles that get trapped in the dough as it cooks and makes the bread puffy instead of a hard lump.
Yeast is actually a living organism. It metabolises the sugar or starch in the mixture and releases carbon dioxide gas.
Baking powder is a mixture of a mild acid and a mild alkaly that, when wetted, react and make carbon dioxide gas.
