Do Pizza ovens need an external exhaust?

There's a nice little shop that's coming onto the market for lease, but it does not have any ventilation or exhaust system to remove any emissions from open cooking. The landlord will however allow an F&B concept to occupy the premises as long as there is not too much smoke and odor emitted. I am thinking of opening a nice small gourmet pizza restaurant, but am worried that for this the property will require an exhaust.

Can i open a pizza restaurant and use pizza ovens that don't require an external exhaust system, or would there simply be too much smells and cooking odours emitted?


Yes, they need a fume hood. Most pizza ovens burn gas. They do make some smaller electric pizza ovens, but those are usually not robust enough to power a pizza restaurant.
