Why don't the leading pizza chains like Papa Johns, Pizza Hut or Domino's use brick oven?
Im sure by now most people have tried pizzas cooked in brick ovens and i for one think they test why better than the regular oven cooked pizza.
I fell if one of those huge pizza chains went with the brick oven approach there sales would go through the roof.
I know a lot of smaller pizza chains use brick ovens and restaurants.
The fast food industry is all about "making food for cheap". Although I do not like pizza, but if I had to bite a pizza to win a game show that will give me enough gold to build a mansion with it, I would pick a brick oven cooked pizza. Brick ovens are quite expensive, the only two places I can think of that are somewhat local are owned by the same people, and both charge around $5-$20 USD for a pizza [It clearly depends on the size and what is on it.] But because fast food places seem to do well, they could probably afford one, they just choose not to care about their consumers health.
