if you let it rise a little longer than the recipe calls for, it will be fluffier, but if risen too long, it will cave in on itself while baking.

lighter, fluffier bread recipes usually call for more fat and sugar than old school breads like french or italian, might want to google recipes for "Pullman Bread" or "Pullman Loaf" which is a sandwich-style loaf named after the Pullman railcar (shape, not edibility!)
