
Clay oven bread in the Middle East?
I lived in Saudi Arabia in the mid 1990's. One of our favorite weekend snacks was a bread purchased for about $.25 cents (1 Saudi riyal). The bread was shaped into balls about the size of a fist and let to rise. Then, each ball was rolled out into a large (12" or larger) diameter flat bread. After it was flat, it was pounded with a mallet with spikes that pounded a bunch of holes through the bread. Then, it was slapped on the wall of a clay tandoori oven and baked for a couple of minutes.
I've tried Indian naan, and the taste, texture, size, and style is not quite right. We called the bread "ta-meese" (that's how we pronounced it.)
Any ideas on what this bread is? And what type of restaurant I can find it in?
Its from Afghanistan. I think they've made it in Saudi Arabia for a long time so the Saudi version may be a little different? Sounds basically the same as what I've had at restaurant here though.
It is spelled either tamis or tamees, not sure which is used more often. Look for either Saudi or Afghan restaurant I guess?
