Ingredients

* 2 ciabatta breads
* 1 red onion. diced
* 500g mixed mushrooms. chopped
* olive oil to fry
* 1 small carton single cream
* balsamic vinegar
* fresh parsley
* 1 tsp garlic
* salt and pepper

Method

* Preheat oven as directed by bread instructions and heat the bread. Heat the oil in a frying pan, fry onion, mushrooms and garlic, season with salt and pepper. Add cream and remove from heat and stir, return to heat and stir gently until warm (do not boil or cream will curdle) stir in fresh parsley. Place bread on serving dishes add a splash of balsamic vinegar and top with mushrooms mixture.
