How do i keep the crispy skin on chicken wings done in the oven?
I coat the chicken in a hot and spicy premixed pack that all i have to do is add water. I let the chicken sit in the sauce overnight then i take it out and cover with bread crumbs and spray some pam on the breadcrumbs then bake. But when i turn the chicken the skin either stays on the pay or it falls off. How do i fix this?
Spray an oil like Pam on the parts you want crispy prior to cooking - that should do the trick. Works for oven fried fish and french fries too. Just one light layer -- and voila`! Crispy!

I basically do the same thing the only difference is that I've been successful at achieving a great crisp on my chicken by using an outdoor pizza oven . Granted, not everyone has one of these but it works great for achieving crispiness on a wide variety of meals. In the end, if you have a backyard it’s a great thing to look into…makes cooking fun too!
