Of course you can - just be prepared to freeze the extra loaves. Another thing you can do it make about 1/3 of the recipe for the starter, pull off the amount you need for one loaf, and you should have about 1/3 cup left. What this does is allow you to make just one loaf and keep enough starter for one loaf in about 10 days -- so you've got enough for yourself but not so much that you have to keep forcing it on other people.
