
Has anyone a recipe for Pizza Bianca? The one with no tomato, just white cheese(s), herbs and oil?
What are the standard cheeses ....and the standard herbs used, please?

Over here, "pizza bianca" is simply pizza drizzled with olive oil, sprinkled with salt, and a little rosemary (not thyme). That's all. Sometimes we eat it with a meal, as a substitute for bread, or it can be carefully sliced open with a knife and filled with mortadella, to be eaten sandwich-style. Yum!
The other pizzas, with white cheeses, aren't called "pizza bianca", but "pizza ai 3 formaggi" or "pizza ai 4 formaggi" or "pizza al gorgonzola". They always have mozzarella as a basic component, and then other various cheeses, depending on who's making it. No herbs with the cheeses, though.
Another "white" pizza is "pizza con le patate": with thinly sliced or julienne sticks of potato over mozzarella, again with rosemary.
